Viton Fluoroelastomer O-Rings are best of practice recommended for use on engines and are rated to 400°F; further, these o-rings surface are more resistant to damage than standard BUNA / Nitrile o-rings.

These Viton o-rings chosen for the mil-spec suitability
for exposure to high temperatures. Your engine's cylinder
heads can operate as high as 380°F. Get o-rings designed
for the task.

Max. Continuous Service Temperature
Viton: 204°C / 399°F
Buna/Nitrile: 121°C / 250°F

Viton retains sealing force to prevent leaks even after
compression for long periods in severe environments.
After 100 hours in air at 150°C (302°F), Viton retains
more than 90% of its original sealing force, while
seals of nitrile retain 40%. Buna/Nitrile is the least
expensive most readily available material.
